Strawberry Vinaigrette
Ingredients
- 1/4 cup Rice Wine Vinegar
- 1/4 cup water
- zest of 1/2 a lemon
- juice of 1/2 a lemon
- 1/2 cup dehydrated strawberries
- 1 tsp mustard powder (or dijon mustard)
- 1 tsp caster sugar (superfine sugar or other sweetener like stevia or honey)
- 1/4 cup olive oil
- salt & pepper to taste
Instructions
- Combine all of the first 7 ingredients in a liquid measuring cup. Using an immersion blender, mix until completely smooth. With the immersion blender running, slowly drizzle in the olive oil until your dressing is completely emulsified. You may need to scrape down the sides of your container. Add salt and pepper to taste.
