Homemade Ciabatta Sandwiches That Steal the Show

When the temperature climbs and the very idea of turning on the oven feels genuinely unreasonable, we have one word for you: sandwiches. Not the kind you make on a Tuesday without thinking — the kind that stop people mid-bite and make them ask, “Wait, what is in this?”

This week at Shookhill Secret, we are officially declaring summer sandwich season open. And we are doing it on the best possible foundation: a homemade ciabatta bread that is airy and chewy and golden on the outside, with that irresistible open crumb that soaks up every last drop of flavor from whatever you pile on top.

No grill required. No stovetop. No sweating over a stove at 7 pm when it is still 90 degrees outside. Just beautiful bread, the best ingredients you can find, and a little bit of layering magic.

Why Ciabatta Changes Everything

We will be honest — there is a big difference between a great sandwich and an ordinary one, and it almost always starts with the bread. Ciabatta, with its rustic crust and pillowy interior, holds up to hearty fillings without turning soggy, and it adds a satisfying chew that regular sandwich bread simply cannot match. If you have a local bakery that makes ciabatta, absolutely get your bread there.  However, making your own is not as hard as you might think.

The good news? Making Ciabatta rolls or bread at home is honestly more approachable than you think. Our homemade ciabatta recipe (find it right here on the blog) comes together with simple pantry ingredients and a little patience — and the result is a bread so good, your guests will assume you picked it up from an artisan bakery. We promise.

Once you have your ciabatta baked and cooled, the real fun begins.

Three Summer Sandwiches We Are Obsessed With Right Now

We built these combinations around what is fresh, what is seasonal, and what requires absolutely zero cooking beyond the bread itself. Each one is layered, flavorful, and genuinely beautiful on a board.

  1. Tomato, Fresh Mozzarella, Basil, Arugula & Balsamic Glaze

This is summer on a sandwich. Start with thick slices of ripe, peak-season tomatoes — the kind from the farmers market that are almost too beautiful to cut into. Layer on fresh mozzarella or burrata, a handful of bright basil leaves, and fresh arugula, then finish with a generous drizzle of balsamic glaze. The glaze is the secret weapon here: it adds a sweet, tangy depth that ties every element together. Slice it in half and try not to eat it before it makes it to the table.

Best with: heirloom tomatoes, buffalo mozzarella or burrata, fresh basil from the garden

  1. Prosciutto, Provolone, Lettuce, Avocado, Mayo, Salt & Pepper

Salty, creamy, satisfying — this one is the crowd favorite every single time. Lay down thin slices of prosciutto (go with the good stuff here — it matters), follow with provolone, a swipe of good mayonnaise, and thick slices of ripe avocado. A pinch of Maldon flaky sea salt and fresh cracked pepper over the avocado is non-negotiable. The result is rich and layered in the best possible way, and the ciabatta holds it all together beautifully.

Best with: imported prosciutto di Parma, aged provolone, a perfectly ripe avocado

  1. Turkey, Brie, Lettuce & Honey Mustard

Do not underestimate this one. It sounds simple, and it is — but the combination of creamy  brie with the subtle sweetness of honey mustard and the earthiness of good turkey is genuinely wonderful. Use a soft, ripe brie and let it come to room temperature before assembling so it spreads into every corner of the bread. This is the sandwich that converts people who think they don’t like brie.

Best with: a good deli turkey or thinly sliced roasted turkey, ripe creamy brie, a grainy honey mustard

How to Serve It

For a casual summer dinner, we love cutting each sandwich into generous halves or thirds and arranging them on a large wooden board alongside a simple green salad, pickles, sweet potato chips and a cold pitcher of something refreshing — herbal iced tea, sparkling water with cucumber, or a crisp rosé if the evening calls for it.

Set out a spread and let people graze. That is the Shookhill Secret philosophy: beautiful food, easy presentation, and a table that feels genuinely welcoming. No fussing, no stress — just good things shared with good people.

Because really, the best summer dinner is the one where nobody spends the whole evening in the kitchen.

Ciabatta Bread

Ingredients

  • 200 g active sourdough starter at peak
  • 520 g bread flour
  • 400 ml warm water
  • 10 g salt
  • 20 ml olive oil

Instructions

  • In a large mixing bowl, dissolve the starter in the warm water and add the olive oil. Mix in the flour and work with a bread whisk until no dry flour remains. Cover and let the dough rest for an hour (autolyze).
  • Incorporate the salt using the stretch-and-fold method. Cover with plastic wrap and let the dough rest.
  • Over the next 3 hours complete 4-5 sets of stretch-and-folds (about every 30-40minutes). Cover the bread with plastic wrap between folds. The dough will gradually become more elastic, smooth and airy.
  • Turn the dough out onto a generously floured surface. Be careful not to degas the dough, you want the bubbles in your dough.
  • Divide your dough into 2-3 rectangular pieces for bread or about 9 pieces for individual rolls. Place them on a well-floured parchment paper or silicon lined baking sheet.
  • Let them rest for 45-60 minutes
  • Bake in a preheated 450 degree oven for 20-25 minutes until golden and crisp. Create steam in your oven by placing ice cubes on a tray at the bottom of the oven. Steam in the first 10 minutes is essential for creating a crispy crust.

Notes

The amount of time your bread takes to rise depends on the temperature in your work area. You can also prepare the dough through the stretch-and-fold steps. the day before and place it in the refrigerator overnight and let it rise and bake the next day.
