Blackberry Crumble Bars

Ingredients

  • Crust:
  • 3 cups old fashioned rolled oats
  • 1 1/8 cups packed brown sugar or brown sugar substitute like Truvia
  • 1 1/8 cups flour
  • 1 cup unsalted butter
  • ½ tsp. salt
  • ½ tsp. baking soda
  • ½ tsp. cinnamon
  • Filling:
  • 4 ½ cups fresh blackberries can substitute other seasonal fruit, blueberries, cherries, peaches, strawberries, figs…
  • ½ cup sugar
  • ¼ cup fresh lemon juice 2-3 lemons
  • 1/8 cup cornstarch

Instructions

  • Prepare the crust. Preheat oven to 350 degrees. Stir together oats, brown sugar, flour, melted butter, salt and baking soda. Remove 1 ½ cups of the oat mixture, and set aside. Press remaining oat mixture in an even layer in an aluminum foil lined 11x13-inch rimmed baking pan. Bake in preheated oven until golden brown, about 20 minutes. Cool completely, about 30 minutes.
  • Prepare the filling. Stir together blackberries, sugar, lemon juice, and cornstarch in a large saucepan. Cook over medium heat, stirring occasionally, until syrup thickens and is bubbly, about 8 minutes. Pour over prepared crust, and crumble the reserved 1 ½ cups of oat mixture evenly over the filling. Bake at 350 degrees until topping is golden brown, about 30-35 minutes. Cool completely, then cut and enjoy!

(Note: this recipe can be made with any mixture of fruit – adjust sugar based on sweetness of the fruit.)
