Cookie Monster Cookies Recipe

Ingredients

  • 1 cup 2 sticks unsalted butter, softened
  • 1 cup brown sugar packed
  • 1/2 cup white sugar
  • 2 large eggs
  • 2 tsp vanilla bean paste
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup bittersweet chocolate chips
  • 1/2 cup mini chocolate chips
  • 1/2 cup Mini M&M’s peanut butter or regular

Instructions

  • Cream butter and sugars together until light and fluffy.
  • Beat in eggs one at a time, then add vanilla.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add dry ingredients to the wet mixture until combined.
  • Stir in chocolate chips (and nuts, fruit, or candy if using).
  • Use a cookie scoop to portion dough into balls.
  • Freeze dough balls on a silicone baking mat or parchment-lined sheet until solid, then transfer to a zip-top freezer bag.
  • To bake: Preheat oven to 350°F. Bake frozen dough balls on a lined sheet for 11–13 minutes. No need to thaw. Just pop them in and enjoy!

Note: these cookies can be customized by adding 3 cups of any combination of chocolate chips, nuts, dried fruit or toffee pieces that you prefer.
