Nonna’s Chicken Soup

Ingredients

  • 2 medium onions finely chopped
  • 4 celery stalks finely chopped
  • 2-3 carrots peeled and finely chopped
  • 1 medium sweet potato peeled and finely chopped
  • 3-4 cloves of garlic minced
  • Herbs of choice thyme, rosemary, bay leaves
  • 8 cups chicken broth
  • 4 bouillon cubes
  • 1 Tbls Vegeta
  • Juice of 1 lemon
  • 1 parmesan cheese rind
  • 2 cups cooked chicken meat we prefer using a rotisserie chicken
  • 3/4 cup pastina

Instructions

  • Put the first 11 ingredients in a crock pot and cook for 4-6 hours on low.
  • With a slotted spoon, remove the parmesan rind and herbs.
  • Using an immersion blender, mix well.
  • Season to taste with salt & pepper.
  • Add cooked chicken and pastina pasta.
  • Cook on low for a minimum of 30 minutes.
  • Serve with fresh parsley and a sprinkle of parmesan cheese.
