Nonna’s Chicken Soup
Ingredients
2
medium onions
finely chopped
4
celery stalks
finely chopped
2-3
carrots
peeled and finely chopped
1
medium sweet potato
peeled and finely chopped
3-4
cloves
of garlic
minced
Herbs of choice
thyme, rosemary, bay leaves
8
cups
chicken broth
4
bouillon cubes
1
Tbls
Vegeta
Juice of 1 lemon
1
parmesan cheese rind
2
cups
cooked chicken meat
we prefer using a rotisserie chicken

pastina
Instructions
Put the first 11 ingredients in a crock pot and cook for 4-6 hours on low.
With a slotted spoon, remove the parmesan rind and herbs.
Using an immersion blender, mix well.
Season to taste with salt & pepper.
Add cooked chicken and pastina pasta.
Cook on low for a minimum of 30 minutes.
Serve with fresh parsley and a sprinkle of parmesan cheese.
